Apple and Lemon Pie

  • 225g (8 oz) short crust pastry
  • 1 beaten egg
  • 1 cup castor sugar
  • Grated rind and juice of 1 large lemon
  • 1 cooking apple, peeled and chopped fairly small



Line a 1 pint pie dish with pastry
Beat the egg and sugar together thoroughly
Add the lemon juice, rind and apple and mix gently
Pour mixture into pastry case
Bake at gas mark 4 (350 degreesF) for 35-40 mins
Serve with cream
