110g self-raising flour
110g butter
110g sugar
2 eggs
pinch salt
2 ripe bananas
half teaspoon bicarbonate of soda


Sift four and salt together
In a separate bowl, cream butter and sugar together
Beat eggs
Add beaten eggs a little at a time to mixture, alternating with a little of the flour until all used up and mixture is smooth and creamy
Mash bananas and stir in bicarb
Add to mixture and mix thoroughly
Pour into greased and lined loose-bottomed 7" (20mm) cake tin
Bake at 325F/gas mark4 for approx 35 mins

n.b. a topping of whipped cream and sliced banana dipped in lemon juice turns this cake into a nice desert.
