Beef and Onion Casserole

  • 500g ( approx1 lb) best stewing or braising steak, cut in 2.5 cm (1 " ) cubes
  • 2 peeled and sliced onions
  • 25g (1 oz) softened butter
  • 25g (1 oz )flour
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon chopped parsley
  • 50g (2 oz) tin of anchovies, drained
  • Salt and pepper



Place meat and onions in casserole dish in alternate layers
Mix butter and flour to a paste - line thickly round the casserole
Cover dish tightly with two layers of tinfoil under the lid to get a good fit
Place casserole in center of oven gas mark 2/ 200 degrees for 3 hours
Chop anchovies finely
Mix with oil, vinegar and parsley
Add to casserole, mixing in the butter and flour paste
Make sure everything is mixed together well
Season to taste
Recover the dish and put back in the oven for a further 30 mins

Serve with boiled potatoes and spring greens
