Bread and Cheese Omelette

  • 275 ml (half pint) milk
  • 75g (3 oz) fresh white breadcrumbs
  • 75g (3 oz) grated cheese
  • 3 beaten eggs
  • salt and pepper
  • a little butter for frying



Bring milk to boil
Remove pan from heat and add breadcrumbs
Leave for a few minutes to absorb milk
Add the eggs and cheese and mix well
Season to taste
Heat frying pan until hot
Melt butter in the pan
When melted, pour in the egg mixture
Fry until browning on both sides
Turn head down immediately, and serve with brown bread and butter

Suggestion - should be good served with a tossed green salad
