Grace's Cookery Book: Main Meals

Cheese Rolls

  • 700g (1.5lb) potatoes, peeled
  • 50g (2 oz) butter or marg
  • 100g (4 oz) grated cheese
  • 1 tablespoon milk
  • 5 hard boiled and coarsely chopped eggs
  • 2 round teaspoons of finely chopped onion
  • 1 beaten egg
  • golden breadcrumbs
  • salt and pepper



Boil potatoes until tender
Mash with butter, milk, cheese and salt and pepper
Stir in the hard boiled eggs and onion
Divide into 8 portions and make into rounds
Dip in beaten egg
Coat in breadcrumbs
Fry in hot deep fat until golden brown
Drain thoroughly

Suggestion: very filling on their own, but try them with boiled ham and green salad
