Coconut Ice Cake

  • 4 oz dark chocolate
  • 2 oz margarine
  • 4 oz coconut
  • 4 oz castor sugar
  • 2 oz chopped glace cherries
  • 1 egg



Line a cake tin approx 19mm x 5.5mm with greaseproof paper
Break chocolate into small pieces into a bowl
Melt over a pan of hot water
Pour into prepared tin and allow to set
Melt margarine gently, stir in coconut, sugar and chopped cherries
Add beaten egg and mix well
Spread over the chocolate in the tin
Bake in mid oven gas mark 4 (350 degrees) for approx 20 mins
