Crispie Scones

  • 4 tablespoons of well crushed cornflakes
  • 4 tablespoons self-raising flour
  • 1 rounded tablespoon castor sugar
  • 50g (2oz) margarine
  • 1 beaten egg
  • few drops vanilla essence



Mix cornflakes and flour
rub in the margarine
Mix in the sugar, egg and vanilla essence and beat well
Turn out on a floured board
Shape into generous rounds approx 2cm thick
Place on lightly greased baking tray
Mark each round into 4 sections, but don't cut through
Bake 15 mins at 400 degrees/gas mark 6 until crisp and brown
Serve slightly warm spread with butter and jam
