Mix cornflakes and flour rub in the margarine Mix in the sugar, egg and vanilla essence and beat well Turn out on a floured board Shape into generous rounds approx 2cm thick Place on lightly greased baking tray Mark each round into 4 sections, but don't cut through Bake 15 mins at 400 degrees/gas mark 6 until crisp and brown Serve slightly warm spread with butter and jam |
