Ginger Cake

  • 450g (1 lb) plain flour
  • 1 level tablespoon ground ginger
  • 110g (4 oz) lard
  • 225g (8 oz) golden syrup
  • 225g (8 oz) black treacle
  • 1 level teaspoon bicarbonate of soda
  • 1 egg, beaten
  • 275ml (half pint) warm water



Seive flour and ginger together
Rub in the lard until like fine breadcrumbs
Warm the syrup and treacle together until melded
Add to the flour mixture
Beat in the egg
Dissolve bicarb in a little water and add to mixture
Pour into greased 9" square cake tin
Bake at gas mark 3 ( 325 degrees) for appeox 1 hour
