Grapefruit Creams
Whisk egg whites until stiff
Carefully mix in sugar
Add cream and mix well but carefully
Gradually mix in grapefruit juice and wine
Spoon mixture into 6 or 8 individual dishes
Chill in fridge for 2-3 hours
Decorate with grapefruit segments just before serving

- 2 egg whites
- 110g (4 oz) castor sugar
- Juice of 1 grapefruit
- 2 tablespoons sweet white wine
- Half pint double cream (whipped but not stiff)
- Grapefruit seg ments for decoration
