Grapefruit Creams

  • 2 egg whites
  • 110g (4 oz) castor sugar
  • Juice of 1 grapefruit
  • 2 tablespoons sweet white wine
  • Half pint double cream (whipped but not stiff)
  • Grapefruit seg ments for decoration



Whisk egg whites until stiff
Carefully mix in sugar
Add cream and mix well but carefully
Gradually mix in grapefruit juice and wine
Spoon mixture into 6 or 8 individual dishes
Chill in fridge for 2-3 hours
Decorate with grapefruit segments just before serving
