Lemon Rice Flan


  • 8inch ready baked flan case
  • 75g ground rice
  • 50g granulated sugar
  • 1 beaten egg
  • 500ml milk
  • few drops of lemon essence
  • a little ground nutmeg



Gradually mix the ground rice and milk together in a saucepan
Add the sugar and egg and mix well
Bring to boil slowly, stirring all the time.
Simmer for five minutes, still stirring
Remove pan from heat, add lemon essence
Pour into flan case, sprinkle with a little nutmeg
Allow to set.
