Macaroni and Chicken (or Bacon) Pie

  • 150g (6 oz) cooked macaroni
  • 1 bunch watercress washed and chopped
  • 225g (8 oz) chopped cooked chicken (or bacon)
  • 25g (1 oz) butter
  • 1 tablespoon dried milk
  • 1 tablespoon wholemeal flower
  • half level teaspoon dries mustard
  • half a clove of garlic, crushed
  • 1 pinch powdered bay leaf
  • salt and pepper
  • 275 ml (half pint) cold water
  • 110g (4 oz) grated cheese
  • 2 heaped tablespoons fresh breadcrumbs
  • 1 pinch cayenne pepper



Mix together macaroni, watercress and chicken (or bacon), put into an ovenproof dish
and set aside
Melt butter in a saucepan and remove from heat
Add dried milk, flour, mustard, garlic, bay leaf, and salt and pepper and mix well
Gradually mix in the water
Bring mixture to the boil, stirring all the time
Add 3 oz of the grated cheese, mix well
Pour sauce over the macaroni mix
Mix together the remaining cheese and the breadcrumbs, and sprinkle on top
Sprinkle the cayenne pepper over
Bake at gas mark 6 (400 degrees) for 30 mins
