Orange Sabayen

  • 5-6 oranges
  • 1 lemon
  • 125g (4.5 oz) icing or castor sugar
  • 3 egg yolks
  • Generous dash of curacao or Drambuie




Halve oranges and press out the juice
Add the juice of 1 lemon and strain.
Put juice in double saucepan or bowl set over steam
Add sugar and egg yolks
Whisk over steam until thick
At last minute, add liqueur
Serve in dishes with small sponge fingers.
