Pineapple and Shrimp Cheese


  • 8 well-drained pineapple rings, or 8 slices of fresh, cored pineapple
  • 225g (8 oz) soft fat cream cheese
  • 225g (8 oz) shrimps or prawns - fresh, or (well-drained) tinned
  • 3 tablespoons double cream
  • 1 tablespoon lemon juice
  • 1 lettuce
  • Salt, pepper and paprika to taste
  • A few stuffed olives and some parsley for garnish



Beat the cheese until smooth
Mix in the shrimps or prawns and lemon juice
Season to taste
Add double cream (unbeaten)

Arrange four or five small lettuce leaves on each individual plate
Place pineapple ring on top
Spoon shrimp mixture into centre
Garnish with parsley and halved olives
