Pork Chops with Baked Apples


  • 4 lean pork chops
  • 4 small baking apples
  • 1 tablespoon of olive oil or 25g of dripping
  • 2 small onions, chopped
  • 1 level tablespoon plain flour
  • 1 level tablespoon tomato ketchup
  • 2 teaspoons mustard powder
  • 2 teaspoons worchester sauce
  • 2 cloves garlic
  • butter
  • salt



Core the apples, grease their skins with a little softened butter and place on a greased baking tray
Using a heavy pan, brown the chops in the oil (or dripping)
Transfer to a casserole dish and set aside
Fry the onion in the remaining fat
When they start to soften, add the flour and mustard powder and fry gently for a further 3-4 minutes
Remove pan from heat, add stock (or water), tomato ketchup, worcester suace, garlic and a little salt
Mix well, return to heat, bring to the boil stirring continually.
Pour mixture over the chops
Cover and place in a pre-heated oven at 350 degrees for 45 mins.
Bake the apples in the oven at the same time.

Suggestion - serve with mashed potatoes and braised leeks.
