Quick Prawn Tartlets


  • 110g/4 oz flour
  • 50g/2 oz butter
  • pinch salt
  • 4 teaspoons water



  • 50g/2 oz peeled prawns
  • small chopped onion
  • 25g/1 oz butter
  • 2 eggs
  • 2 tablespoons single cream
  • 12g/half ounce chopped parsley
  • salt and pepper
  • lemon slices and parsley for garnish


Make up the pastry and shape into tartlet cases
Bake blind for 8-10 mins at gas mark 6/400F
Fry onion gently in butter until soft
Beat in the eggs and other ingredients
Spoon mixture into tartlet cases and bake for 25 mins
Garnish with lemon and parsley
