Grace's Cookery Book: Main meals


Large tin salmon
1 cup cooked peas
1 heaped desert spoon finely chopped onion
1 desert spoon parsley
20g butter
20g flour
salt and pepper
liquid from tin of salmon made up to 570ml with milk
1 rounded tablespoon fresh breadcrumbs


Melt 15g butter in saucepan, add onion and gently cook for 3 mins
Add flour and mix well
Gradually add liquid and bring to boil, stirring continuously
Stir in salmon, peas and parsley
Season with salt and pepper
Pour into baking dish
Sprinkle with breadcrumbs and dot with butter
Bake for 10-15 mins at 370F/gas mark
