Tea Brack

  • 225g sultanas
  • 225g currants
  • 225g soft brown sugar
  • half pint of medium strength cold tea
  • 550g self raising flour
  • 4 tablespoons milk



Put fruit and sugar in a bowl, add the tea and leave to soak overnight
Next day, sift the flour into the bowl of fruit
Add the milk and beat well
Turn into a 20 cm ( 8") greased and lined cake tin
Bake for 1 hour in pre-heated oven gas mark 5 (375 degrees)
