Vegetable Soup
A hearty soup, filling enough for a lunch or supper
- 1 medium-sized turnip, swede and parsnip - all peeled and diced
- 2 large potatoes cut in to approx 1.25 cm (half inch) cubes
- 2 large carrots, peeled and sliced
- 1 onion, peeled and sliced
- 1 small cabbage, shredded
- 1 packet of chicken noodle soup mix
- 2 chicken stock cubes
- salt and pepper to taste
- grated cheese
Method:
Put all ingredients into a large saucepan
Cover with cold water
Bring to boil and simmer for 30-45 mins
Sprinkled grated cheese on each serving
Serve with plenty of hot fresh cottage loaf or garlic bread
Suggestion: even nicer if you use home-make chicken stock instead of water
